Cheesy Smothered Spinach and Mushroom Chicken

    It's long past due, but I'm finally posting a recipe for the weekly blog post. Try at your own risk! I was messing around with ingredients I had in my fridge one day and *poof!* invented this recipe. I feel like a wizard!
Incredibly easy, only a couple ingredients, and delicious. On top of that, it's super healthy. So there's that.

Here's what you'll need:

1) 4 Boneless, skinless chicken breasts
2) 1-2 Packages Sliced mushrooms
3) 1/4-1/2 Bag of Fresh spinach
4) 4 Pepper jack cheese slices
5) Olive Oil or Butter
6) Salt and pepper to taste


The amounts used can be adjusted easily depending on how many are eating and what flavors are preferred. My hubbie and I love mushrooms so I actually use two packages of mushrooms for us.

Step One:
    Cook the chicken through in a skillet. I used olive oil because it's healthier, and I like the way it tastes with chicken. Once the chicken is done, set aside. I kept it in the oven on warm.

Step Two:
    Saute the mushrooms. I've made this recipe twice. The first time I sauteed them in butter and the second in olive oil. Personally, I preferred the taste of them with butter, but I know olive oil is much healthier. Whatever you would prefer or have on hand is fine.

Step Three:
    When the mushrooms are basically done, heap the fresh spinach on top of them in the skillet. Feel free to be generous with the spinach. It really cooks down!

Step Four:
    Told ya! Now's a great time to throw some salt and pepper in the pan. Remember the chicken breasts we hid in the oven? Grab those and smother them with the mushrooms and spinach. Once they're covered, take the slices of pepper jack cheese and cover the breasts. I stuck them back in the oven for a minute or two and the cheese melted perfectly.

    And voila! There you have it! Delicious and healthy. This goes great with garlic bread.
